GRILLED SIRLOIN AND ITS CELLAR MASTER SAUCE

Geographical location

Remarkably exposed on the south side of the famous Pomerol plateau, the terroir of Croix Toulifaut is situated between Château Beauregard in Pomerol and Château Figeac, Saint-Émilion 1er Grand Cru Classé.

Soil type

sandy on a ferruginous background with very large quantities of "clinker" hardpan whose influence is pleasantly felt in the ageing of the great wines of Pomerol.

Grape varieties

85% Merlot, for roundness, fullness and fruit aromas and 15% Cabernet Franc, for elegance, structure.

Character of the wine

advice from Michel Rolland, whose expertise as an oenologist is well known: elegance, finesse, velvety, subtlety of the Croix Toulifaut have something discreetly feminine; it is, according to Jean-Luc Pouteau, voted best sommelier in the world, "the Princess of Pomerol".
